Weekday meeting

Thanks to all who helped and came to our Relief Society Birthday Dinner.  It was a great evening of remembrance and a celebration of Relief Society as well as wonderful food!  

Here are a couple of recipes that were served at the dinner.

Salad

1/2 head of romaine lettuce, washed and chopped into bite-sized pieces
6-8 oz of spinach
12-16 ounces chicken (optional)
8oz strawberries sliced fresh
8oz blueberries fresh
4 oz parmesan cheese
1c sliced almonds

Berry poppy seed dressing
1/2 cup white wine vinegar
1-2 cloves garlic
1T grated red onion
1/2 cup sugar, or honey (I used stevia one time and it was ok, but not the next day it was yucky the next day)
1T salt
10 cracks pepper
1 c fresh raspberries or blackberries or strawberries (i did use frozen raspberries once and it was good)
2/3 cup canola oil (no substitutes)
1 1/2 tsp poppy seeds

combine all but poppy seeds and canola oil, blend and then drizzle oil in slowly add seeds 
refrigerate for about 1-2 hours before serving
 
Chicken
 
In a 9 X 13 pan put in 8 chicken breasts
One Piece of Swiss cheese on top
Mix 1 can cream of chicken soup with 1/4 cup water
Add to chicken
Stove top stuffing - crush up and add on top
1/3 c. butter melted and drizzled on top
 
Bake at 350 for 1 hour
